  • 1 cup room temperature water
  • ¾ cup whole milk
  • 2½ teaspoons instant yeast
  • ¼ cup granulated sugar
  • 5 cups bread flour
  • ½ cup whole wheat flour
  • 1½ teaspoons fine sea salt
  • 4 tablespoons softened unsalted European-style butter
  • 1¾ cups very cold unsalted European-style butter (cut into pieces)
  • For Egg Wash: ¼ cup bread flour, 1 egg yolk, and 1 tablespoon heavy cream

Instructions

  1. In a stand mixer bowl, combine water and milk. Sprinkle yeast on top and let sit for about 5 minutes.
  2. Mix in sugar, both flours, and salt. Knead on low to medium speed until smooth (8-10 minutes).
  3. Flatten softened butter between parchment paper and refrigerate until firm.
  4. Roll out dough into a rectangle, place cold butter in the center, and fold the dough over it.
  5. Roll out again into a rectangle and fold into thirds; repeat this process two more times with chilling in between.
  6. Cut triangles from the final rolled-out dough and roll from base to tip to shape croissants.
  7. Place on baking sheets lined with parchment paper and let proof until doubled in size.
  8. Preheat oven to 425°F (220°C). Brush croissants with egg wash and bake for 20-24 minutes until golden brown.
