  • 2 lb beef chuck stew meat
  • 1 lb celery root (peeled and cubed)
  • 6 cups beef bone broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 medium onion (diced)
  • 2 medium carrots (sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 medium bay leaves

Instructions

  1. Season the beef with sea salt and black pepper.
  2. In a Dutch oven, heat olive oil over medium heat and sear the beef until browned. Remove and set aside.
  3. Sauté onions and carrots in the same pot until softened, then add garlic and Italian seasoning.
  4. Return the beef to the pot along with broth, tomatoes, and bay leaves; bring to a boil.
  5. Reduce heat and simmer for about 45 minutes before adding celery root; simmer for an additional 15 minutes until tender.
  6. Remove bay leaves and adjust seasoning as desired.
