  • 1 1/2 tsp baking powder
  • 1/2 cup buttermilk
  • 3/4 cup powdered sugar
  • 2 tbsp key lime juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 loaf pan.
  2. In a mixing bowl, cream together butter and sugar until fluffy (about 2–3 minutes).
  3. Add eggs, key lime zest, key lime juice, and vanilla; mix until combined.
  4. In another bowl, whisk flour, salt, and baking powder together. Gradually add to wet ingredients while stirring gently.
  5. Pour in buttermilk and stir until just combined.
  6. Pour batter into the prepared loaf pan and bake for about 45 minutes or until golden brown and a toothpick inserted comes out clean.
  7. While baking, prepare the glaze by whisking powdered sugar with key lime juice until smooth.
  8. Once baked, cool for about 10 minutes before glazing while still warm.
