  • 1½ cups granulated sugar
  • 3 small or medium lemons, zested (or 2 large lemons)
  • 1 cup unsalted butter, melted
  • 1 large egg (US), room temperature
  • 1 large egg yolk (US), room temperature
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • ¼ cup granulated sugar for rolling (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together sugar and lemon zest until combined. Add melted butter, egg, egg yolk, and vanilla extract; mix until smooth.
  3. In a separate bowl, combine flour, cornstarch, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until combined. Fold in blueberries carefully.
  4. Using a cookie scoop, place dough on the prepared baking sheet about 3 inches apart.
  5. Bake for 10–12 minutes or until edges are set and lightly golden brown. Let cool for a few minutes before transferring to a cooling rack.
