  • 8 tablespoons unsalted butter
  • 6 tablespoons fresh lemon juice
  • Zest of 2 large lemons
  • 1 cup sugar
  • 10-ounce package vegan marshmallows
  • 3.4-ounce package instant lemon pudding
  • 6 cups Rice Krispies cereal

Instructions

  1. Prepare a 9 X 13-inch baking dish by spraying it with cooking spray.
  2. In a large bowl, melt 8 tablespoons of butter over low heat. Add vegan marshmallows and stir until melted.
  3. Remove from heat and mix in lemon juice, zest, sugar, and lemon pudding until combined. Fold in Rice Krispies.
  4. Press the mixture evenly into the prepared dish using a rubber spatula.
  5. For the meringue, beat egg whites with cream of tartar until soft peaks form; gradually add sugar until stiff peaks form and fold in vanilla.
  6. Spread meringue over the Rice Krispies base and create peaks with a spatula.
  7. Bake at 350°F (175°C) for about 10 minutes or until golden brown.
  8. Allow to cool before cutting into squares.
