Ingredients

Scale
  • 200 g granulated sugar
  • 1 tbsp lemon zest
  • 110 g butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 210 g all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp poppy seeds
  • 200 g cream cheese (cold)
  • 75 g powdered sugar
  • 120 g heavy cream

Instructions

  1. 1. Preheat oven to 350°F (175°C). Combine granulated sugar and lemon zest in a mixing bowl.
  2. 2. Add softened butter and mix with an electric mixer until fluffy. Mix in the egg and vanilla until combined.
  3. 3. In another bowl, whisk together flour, baking powder, baking soda, poppy seeds, and salt. Gradually add to wet ingredients without overmixing.
  4. 4. Scoop tablespoon-sized portions onto a lined baking sheet and leave space between each cookie. Bake for about 10 minutes or until lightly golden.

  6. 6. Once cookies are cooled, frost generously and garnish with additional poppy seeds or lemon slices if desired.
