  2. Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
  3. Pound cold unsalted butter between parchment paper until it's about ½ inch thick. Chill if needed.
  4. Roll out the chilled dough into a rectangle, place the butter layer on half of it, fold over the other half to encase the butter, and roll out gently.
  5. Fold into thirds like a letter; repeat this process two more times.
  6. Cut triangles from the rolled-out dough and roll each triangle from base to tip to shape croissants.
  7. Place on a baking sheet lined with parchment paper, proof until doubled in size (about 1 hour), brush with beaten egg, then bake at 375°F (190°C) for about 22 minutes or until golden.
