  • 2½ tbsp sugar
  • ⅓ cup melted butter
  • 8 oz cream cheese
  • 2 eggs
  • ¼ cup sugar
  • ½ tsp vanilla extract
  • 7.5 oz pumpkin puree
  • ½ cup evaporated milk
  • ½ tsp cinnamon
  • ⅛ tsp nutmeg
  • ⅛ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. For the crust, mix graham cracker crumbs, sugar, and melted butter until combined; press into the bottom of each liner.
  3. In a separate bowl, beat cream cheese and sugar until smooth; add eggs one at a time, then mix in vanilla, pumpkin puree, evaporated milk, cinnamon, nutmeg, and salt.
  4. Pour filling over crusts and bake for about 55 minutes or until set. Cool before serving.
