  • 1 ½ cups warm water
  • ¼ cup baking soda
  • ¼ cup unsalted butter (melted)
  • 1 tablespoon fresh rosemary (chopped)
  • ½ cup grated Parmesan cheese
  • 8 ounces mozzarella cheese (cut into 1-inch cubes)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
  2. In another bowl, whisk together flour and salt. Gradually add to the yeast mixture until combined.
  3. Knead dough until smooth (5 minutes with a stand mixer or 8 minutes by hand).
  4. Mix in chopped rosemary and grated Parmesan. Let rise in a greased bowl for about an hour until doubled.
  5. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down the dough, divide into 8 pieces, flatten each piece, and wrap around mozzarella cubes.
  7. Shape into pretzels and boil each in water mixed with baking soda for about 30 seconds.
  8. Brush with melted butter and sprinkle with coarse sea salt before baking for 12-15 minutes.
