  • 4 cups sugar

  1. Wash the strawberry tops thoroughly to remove any dirt.
  2. In a small pot, combine the strawberry tops and water.
  3. Stir in the sugar (maintain a 1:1 ratio of sugar to water).
  4. Bring to a boil, then simmer for 10–15 minutes until the mixture turns red and the tops are faded.
  5. Strain the mixture into a measuring cup, pressing down on the solids to extract maximum liquid.
  6. Return the juice to the pot and boil again until reduced by about 1/4 and slightly thickened.
  7. Cool before storing in jars in the fridge.
