  • 12 Tbsp. unsalted butter
  • 1 1/4 cups chocolate chips, divided
  • 3/4 cup cocoa powder
  • 1/2 tsp. salt
  • 3/4 cup sugar
  • 3/4 cup brown sugar, packed
  • 3 large eggs
  • 2 Tbsp. vegetable oil
  • 1 tsp. peppermint extract
  • 3/4 cup flour
  • 1 1/2 tsp. espresso powder (optional)
  • Peppermint Candies/Candy Canes, crushed for garnish
  • 1/2 cup heavy cream
  • 1 tsp. butter
  • pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
  2. Melt unsalted butter with ½ cup chocolate chips in a microwave-safe bowl.
  3. Stir in cocoa powder, salt, and optional espresso powder.
  4. Add sugars and mix well before incorporating eggs one at a time.
  5. Mix in vegetable oil and peppermint extract; then gently fold in flour and remaining chocolate chips.
  6. Pour batter into the prepared pan and bake for 35 to 40 minutes until a toothpick comes out mostly clean.
  7. Allow brownies to cool completely before preparing ganache by heating heavy cream and mixing it with remaining chocolate chips, peppermint extract, butter, and salt.
  8. Spread ganache over cooled brownies and top with crushed peppermint candies.
  9. Chill for at least one hour before cutting into squares.
