  • 6 tablespoons butter
  • 1 cup yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 5 cloves garlic, minced
  • 8 cups chicken broth
  • 8 oz uncooked elbow macaroni
  • 1 cup heavy cream
  • 8 oz sharp cheddar cheese, shredded
  • 1 teaspoon white balsamic vinegar
  • Kosher salt

  • 4 sesame seed buns, diced into 1-inch pieces
  • 2 tablespoons olive oil
  • sliced green onion

Instructions

  1. Preheat your oven to 400°F (200°C). Spread diced sesame seed buns on a baking sheet, drizzle with olive oil, and bake for about 10 minutes or until crispy.
  2. In a large pot over medium heat, brown the ground beef seasoned with oregano, thyme, salt, and pepper. Set aside once cooked.
  3. In the same pot, melt butter and sauté onions, carrots, and celery until tender. Add minced garlic and remaining herbs; cook until fragrant.
  4. Stir in flour to thicken the mixture briefly before deglazing with chicken broth.
  5. Add the remaining broth and uncooked macaroni; bring to a simmer for about 5–7 minutes until pasta is al dente.
  6. Remove from heat; stir in heavy cream and shredded cheese until melted. Return the beef to the pot and season as desired.
  7. Serve hot topped with croutons, green onions, and additional cheese.
