Ingredients

Scale
  • 1 tablespoon active dry or instant yeast
  • 1/4 cup superfine sugar
  • 1 and 1/2 cups chilled whole milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsalted butter (softened)
  • 4 cups all-purpose flour (plus extra for rolling)
  • 2 teaspoons sea salt
  • 1 bar dark chocolate (semi-sweet or bittersweet, roughly chopped)
  • 2 tablespoons all-purpose flour (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. In a mixing bowl, combine yeast, sugar, and warm milk; let it sit until foamy (about 5 minutes).
  2. Add cinnamon, softened butter, flour, and salt. Mix until combined and knead until smooth.
  3. Shape dough into a ball, cover with plastic wrap, and let rise in a warm place for about 90 minutes.
  4. Roll risen dough into a rectangle approximately 1/2 inch thick.
  5. Prepare the butter block by mixing softened butter with flour until smooth; place on half of the dough and fold over.
  6. Roll out again into a rectangle and fold into thirds like a letter; repeat two more times.
  7. Cut dough into triangles, place chopped chocolate at the base, and roll up tightly.
  8. Let shaped croissants rise on parchment-lined baking sheets for about 45 minutes.
  9. Preheat oven to 400°F (200°C), brush croissants with egg wash made from whisking egg with milk before baking.
  10. Bake for about 20 minutes until golden brown.
