  • 1 lb ground beef
  • 15 oz dark red kidney beans (drained and rinsed)
  • 15 oz cannellini beans (drained and rinsed)
  • 1 small yellow onion (diced)
  • 2 medium carrots (diced)
  • 3 ribs celery (diced)
  • 2 cloves garlic (minced)
  • 29 oz diced tomatoes (with liquid)
  • 15 oz tomato sauce
  • 1 cup beef broth
  • 8 oz Ditalini pasta
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp sugar

Instructions

  1. In a large Dutch oven over medium heat, brown the ground beef for about 7 minutes, then drain excess fat.
  2. Add the diced onion, carrots, and celery to the pot. Sauté for about 10 minutes until softened, then mix in the minced garlic for an additional 1-2 minutes.
  3. Pour in the diced tomatoes with their liquid, tomato sauce, drained beans, beef broth, basil, oregano, salt, pepper, and sugar. Stir well and let simmer on low heat for 20 minutes.
  4. Cook Ditalini pasta separately according to package instructions until al dente; drain.
  5. Add drained pasta to the soup just before serving. Garnish with fresh basil if desired.
