  • 1 cup salted butter
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup light brown sugar
  • Spices: cinnamon, nutmeg

Instructions

  1. Make the Peach Filling: In a medium saucepan, combine diced peaches, sugars, lemon juice, cinnamon, and nutmeg. Cook over medium heat until bubbly. Mix cornstarch and water in a bowl, stir into the peach mixture, and cook for another minute. Remove from heat and stir in vanilla extract; cool in the fridge.
  2. Prepare Cookie Dough: Cream softened butter with both sugars using an electric mixer. Add vanilla and eggs until just combined. Gradually mix in the dry ingredients to form dough. Chill in an airtight container for at least three hours.
  3. Bake Cookies: Preheat your oven to 350°F (175°C). Roll chilled dough into balls and coat them in a sugar-spice mixture before placing them on cookie sheets. Bake for 11-13 minutes until lightly golden.
  4. Assemble: After cooling the cookies, add peach filling into centers and drizzle with glaze.
