  • 1 cup chopped fresh peaches (divided)

Instructions

  1. Preheat oven to 375°F (190°C) and prepare muffin pan.
  2. In a bowl, whisk together dry ingredients: flour, baking powder, salt, and sugar.
  3. In another bowl, mix wet ingredients: milk, egg, oil, and vanilla until smooth.
  4. Combine wet ingredients with dry ingredients; stir gently.
  5. Fold in 3/4 of the chopped peaches and fill muffin cups two-thirds full. Top with remaining peach pieces.
  6. Bake for about 20 minutes until golden brown; check doneness with a toothpick.
  7. Cool slightly before serving.
