  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth

  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken; cook until golden brown. Remove and set aside.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened.
  3. Stir in cubed pineapple and cook for about 2 minutes until slightly caramelized.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper to the skillet. Bring to a boil; reduce heat to low.
  5. Cover and simmer for 18-20 minutes until rice is fully cooked.
  6. Return cooked chicken to skillet; mix well and heat through before serving.
