  • 1 cup diced pineapple

  • 1/2 cup diced bell peppers

  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add the diced chicken and cook until no longer pink. Remove from skillet and set aside.
  2. In the same skillet, sauté minced garlic until fragrant. Then add diced carrots, peas, and bell peppers; cook until tender.
  3. Push vegetables to one side, add cooked rice to the other side, and mix together with the pineapple.
  4. In a small bowl, combine soy sauce with additional seasonings if desired, then pour over rice mixture in skillet.
  5. Return cooked chicken to the skillet, stir everything well, and heat through.
