  • 1 1/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 1/2 cup softened unsalted butter
  • 1/2 cup warm milk
  • 2 large eggs
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a round cake pan or loaf pan.
  3. In one bowl, mix flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  4. In another bowl, cream softened butter and sugar using a hand mixer until fluffy.
  5. Add eggs to the butter-sugar mixture and mix well.
  6. Incorporate pumpkin puree and vanilla; mix until combined.
  7. Gradually add dry ingredients until just mixed.
  8. Pour in warm milk; stir until smooth.
  9. Transfer batter into the prepared pan.
  10. Bake for 45–55 minutes (cake pan: 45–50 min; loaf pan: 50–55 min) until a toothpick comes out clean.
  11. Cool in the pan for 15 minutes before removing.
