  • 280 g pumpkin purée
  • 75 g vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 200 g butter
  • 15 g dark brown sugar
  • 100 g full-fat cream cheese
  • 345 g powdered sugar (sifted)
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 175°C (350°F) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and pumpkin spice until well combined.
  3. In another bowl, mix dark brown sugar, pumpkin purée, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gently fold the dry ingredients into the wet mixture using a rubber spatula until just combined; do not overmix.
  5. Divide the batter evenly among the cupcake liners and bake for about 23 minutes or until a toothpick inserted comes out clean.
  6. Allow cupcakes to cool in the tin for 10 minutes before transferring to a wire rack.
  7. While cooling, beat butter with dark brown sugar and cream cheese until creamy; gradually mix in sifted powdered sugar and vanilla extract until fluffy.
  8. Frost cooled cupcakes generously with the cream cheese frosting.
