  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased or parchment-lined 9×13-inch baking dish.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined.
  3. Press half of the crumble mixture into the baking dish as the base layer.
  4. In a separate bowl, whisk together pumpkin puree, granulated sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the base layer evenly.
  6. Sprinkle remaining crumble mixture on top and optionally add chopped walnuts.
