  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 large carrot, diced
  • 4 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 2 cups fresh or frozen corn kernels
  • 1 can (14.5 oz) coconut milk
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, garlic, celery, and carrot for 5 minutes until softened.
  2. Add vegetable broth and rinsed quinoa; bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  3. Stir in corn kernels and coconut milk along with smoked paprika, thyme, salt, and pepper. Cook on low for an additional 5–10 minutes until heated through.
  4. Serve warm, garnished with fresh parsley.
