  • 1 sheet of puff pastry
  • 250 ml milk
  • 20 g cornstarch
  • 2 egg yolks
  • 50 g sugar
  • 1 teaspoon vanilla extract
  • Fresh or frozen raspberries

Instructions

  1. Preheat oven to 190 degrees Celsius.
  2. In a saucepan, combine milk, cornstarch, egg yolks, sugar, and vanilla extract. Heat while stirring until thickened.
  3. Remove from heat and stir in butter. Allow to cool.
  4. Roll out puff pastry on a floured surface and cut into eight rectangles.
  5. Fill each rectangle with cooled custard and raspberries.
  6. Fold over to seal and brush tops with an egg wash (egg yolk mixed with milk).
  7. Bake on a parchment-lined baking sheet for 15-20 minutes until golden brown.
  8. Cool briefly before serving, dusting with powdered sugar if desired.
