  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • fresh cracked pepper
  • shaved Parmesan
  • fresh chopped parsley

Instructions

  1. 1. Heat olive oil in a large pot over medium-high heat.
  2. 2. Sauté diced onion with salt and pepper until softened (3–4 minutes).
  3. 3. Add minced garlic and Italian seasoning; sauté for 30 seconds.
  4. 4. Stir in tomato paste for an additional minute, then add Italian sausage and cook until browned.
  5. 5. Combine chicken broth, crushed tomatoes, ravioli, salt, and pepper; bring to a simmer.
  6. 6. Reduce heat to low and simmer until ravioli is al dente (3–5 minutes).
