  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 1/2 cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil for frying

Instructions

  1. Soak the pineapple rings in dark and coconut rum for at least 1 hour. Drain and pat dry.
  2. Set up dredging stations: place flour in one bowl, sweetened coconut flakes in another, and whisk together eggs and coconut milk in a third.
  3. Coat each ring by dipping it in flour, then egg mixture, and finally pressing it into the coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C). Fry each coated ring for about 1 minute on each side until golden brown; drain on paper towels.
  5. For the dipping sauce, combine softened cream cheese and powdered sugar in a bowl; gradually stir in reserved rum until smooth.
