  • 2 pounds beef (chuck or brisket)
  • 3 tablespoons olive oil
  • 16 ounces small pearl onions
  • 4 cloves fresh garlic
  • 1 cup red apple vinegar
  • 28 ounces crushed tomatoes
  • 1 stick cinnamon (optional)
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cut the beef into large chunks. In a Dutch oven over medium-high heat, add olive oil and sear the beef until browned on all sides. Remove and set aside.
  2. In the same pot, sauté pearl onions and garlic until soft and fragrant (about 5 minutes).
  3. Deglaze the pot with red apple vinegar, scraping up any browned bits.
  4. Return the beef to the pot along with crushed tomatoes, cinnamon stick, bay leaves, oregano, honey (or sugar), salt, and pepper. Stir well.
  5. Cover and reduce heat to low; let simmer for about 120 minutes or until the beef is fork-tender.
  6. Remove bay leaves before serving and garnish with chopped parsley.
