  • ⅔ cup cottage cheese
  • 56 tablespoons finely chopped scallions
  • 2 tablespoons mayonnaise
  • 1½ teaspoons Dijon mustard

Instructions

  1. Boil the eggs in water for 7-8 minutes after bringing to a boil; cover and remove from heat.
  2. Cool the eggs in ice water for 2 minutes before peeling.
  3. Chop four eggs and finely dice the remaining two; separate yolks from four.
