  • 3 tablespoons butter (divided)
  • 2 small zucchini (sliced)
  • 1 pound small button mushrooms (cleaned)
  • 1 small yellow onion (diced)
  • 3 to 4 cloves garlic (minced)
  • ¼ cup vegetable broth
  • Salt and black pepper (to taste)
  • Fresh parsley and grated Parmesan (for garnish)

Instructions

  1. Heat olive oil and ½ tablespoon butter in a large skillet over medium-high heat.
  2. Add zucchini slices, season with salt and pepper, and cook for about 3-4 minutes until fork-tender. Remove from skillet.
  3. In the same skillet, melt remaining butter over medium-high heat. Add onions and cook for 2 minutes until softened.
  4. Stir in mushrooms; cook for 5-7 minutes until browned.
  5. Add garlic; cook for about 20 seconds until fragrant.
  6. Return zucchini to the skillet, stir to combine, then add vegetable broth. Cook for an additional 2 minutes.
  7. Adjust seasoning as needed before serving with parsley and Parmesan.
