  • 6 boneless beef chops
  • 4 cups thinly sliced potatoes
  • 1 small onion, thinly sliced
  • 2 cups shredded cheddar cheese
  • 2 cups milk
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Fresh parsley chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season beef chops with salt, black pepper, garlic powder, and onion powder.
  3. In a large skillet, heat olive oil and brown the beef chops on both sides. Remove and set aside.
  4. In the same skillet, sauté onions in butter until translucent.
  5. Stir in flour until slightly browned; gradually whisk in milk and chicken broth until thickened. Add thyme, paprika, and cheese.
  6. Layer half the potatoes in a greased baking dish; pour half the cheese sauce over them. Place beef chops on top and layer remaining potatoes and cheese sauce.
  7. Cover with foil and bake for 45 minutes; remove foil and bake an additional 15 minutes until golden.
