  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (each 125g), sliced thin
  • 8 sun-dried tomatoes, dried and chopped
  • 4 tablespoons pesto
  • Butter, as needed

Instructions

  1. Gather all ingredients and ensure mozzarella is thinly sliced.
  2. Spread 2 tablespoons of pesto on one side of each slice of sourdough.
  3. Layer sliced mozzarella and chopped sun-dried tomatoes on two slices with pesto facing up.
  4. Top with another slice of sourdough (pesto side inwards).
  5. Heat a non-stick skillet over medium heat and add butter to coat the bottom.
  6. Cook each assembled sandwich for about 3-4 minutes per side until golden brown and crispy.
  7. Remove from skillet, let cool slightly, slice in half, and enjoy warm!
