  • 1 ripe avocado, sliced
  • 120g ground beef
  • 1 cup cherry tomatoes, chopped
  • 2 tbsp grated manchego cheese (or alternative)
  • 1 tsp chili oil
  • 1 tsp everything bagel seasoning
  • 1 tsp Tajn seasoning (or chili-lime spice)
  • 1 tsp sriracha
  • Olive oil for frying
  • Salt and pepper to taste

Instructions

  1. In a non-stick skillet over medium heat, brown the ground beef until fully cooked. Add chopped tomatoes and sauté until softened. Stir in grated cheese, season with salt and pepper, then remove from heat.
  2. Heat olive oil in a separate non-stick skillet over medium heat. Crack in the eggs gently and cook sunny side up or to your preference. Drizzle with chili oil and sprinkle everything bagel seasoning on top.
  3. Assemble by layering cooked beef at the bottom of a bowl, topping it with sliced avocado sprinkled with Tajn seasoning and drizzled sriracha. Place fried eggs on top and serve immediately.
