  • 10 tbsp butter
  • 1 ½ cups dark chocolate chips
  • 1 cup sugar
  • 1/4 cup dark brown sugar
  • 3 eggs
  • 1 tsp espresso powder (optional)
  • 2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 package candy eyes
  • 20 oz semi-sweet or milk chocolate chips
  • 1 tbsp coconut oil
  • 1 cup powdered sugar
  • 23 tbsp heavy cream, to thin

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9 x 9 inch pan with parchment paper.
  2. Melt the butter and dark chocolate chips together in the microwave until smooth.
  3. In a stand mixer, beat the eggs until frothy, then mix in the melted chocolate mixture along with sugar and vanilla.
  4. Combine dry ingredients – flour, cocoa powder, baking powder – into the egg mixture; fold in remaining chocolate chips.
  5. Spread batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out with moist crumbs.
  6. Cool brownies completely before dipping in melted semi-sweet chocolate and decorating with icing and candy eyes.
