  • 4 salmon fillets (or 1 lb salmon, cut into cubes)
  • 3 tbsp sriracha sauce
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 2 cups cooked jasmine rice
  • 2 cups cauliflower florets
  • Olive oil, salt, and pepper for roasting

Instructions

  1. In a bowl, whisk together sriracha sauce, honey, soy sauce, minced garlic, lime juice, and sesame oil to create the marinade.
  2. Marinate the salmon in half of the marinade for 15 minutes while reserving the rest.
  3. Preheat your oven to 400°F (200°C). Toss cauliflower with olive oil, salt, and pepper; roast for 20-25 minutes.
  4. Heat a skillet over medium-high heat and sear the marinated salmon for about 2-3 minutes per side until caramelized.
  5. Pour reserved marinade over cooked salmon to create a glaze; let bubble briefly.
  6. Assemble bowls with cooked rice topped with roasted cauliflower and glazed salmon.
  7. Garnish with chopped green onions, cilantro, and sesame seeds.
