  • 1 cup unsalted butter (for frosting)
  • 1/4 cup heavy cream (or whole milk)
  • 2 teaspoons pure vanilla extract (for frosting)
  • 1/8 teaspoon fine sea salt (for frosting)
  • 4 cups confectioners' sugar, sifted
  • 12 Golden sandwich cookies (like Golden Oreos), cream filling removed
  • 1 cup freeze-dried strawberries, lightly crushed
  • 4 Tablespoons unsalted butter, melted and cooled

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine the softened butter and granulated sugar. Beat them together with an electric mixer until light and fluffy. Add in egg whites, whole egg, milk, vegan gelatin powder, and vanilla extract. Mix until well combined.
  3. In another bowl, sift together all-purpose flour, baking powder, baking soda, and sea salt. Gradually add this mixture into your wet ingredients while beating on low speed until just combined.
  4. Divide the batter evenly between the prepared pans. Bake for about 25 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool in pans for ten minutes before transferring them onto wire racks.
