  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • ¾ cup strawberry jam
  • Sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
  3. In a large mixing bowl, cream together softened butter, granulated sugar, and powdered sugar until light and fluffy.
  4. Add in the eggs one at a time, followed by vanilla extract and optional almond extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. Scoop about 1 tablespoon of dough, flatten it into a disc, and create a small well in half of the discs.
  7. Fill each well with approximately 1 teaspoon of strawberry jam and top with another disc, sealing the edges.
  8. Bake for 10-12 minutes until lightly golden at the edges. Allow cooling before decorating.
