  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 2 large ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1 cup cooked and cooled quinoa
  • 1/3 cup thinly sliced red onion
  • 1/3 cup crumbled feta cheese (or vegan alternative)
  • 1/3 cup sliced almonds, lightly toasted
  • 1/4 cup fresh mint leaves, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 1 small clove garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • Freshly ground black pepper to taste

Instructions

  1. Massage chopped kale with olive oil and salt until tender.
  2. Mix dressing ingredients in a small bowl or jar and whisk until emulsified.
  3. Combine massaged kale with cooked quinoa and half the dressing, tossing well.
  4. Fold in peaches, blueberries, red onion, and chopped mint leaves.
