  • 6 tablespoons cornstarch
  • 50 ml vegetable oil
  • Salt and pepper to taste
  • 1 onion (thinly sliced)
  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger (grated)
  • 2 cloves garlic (grated)
  • 432 g tin pineapple pieces (drained; reserve the juice)

Instructions

  1. Season the diced chicken with salt and pepper; coat in cornstarch.
  2. Heat oil in a frying pan or wok over medium-high heat and fry chicken until golden brown (8-10 minutes). Remove and set aside.
  3. Stir-fry onion and bell peppers in the same pan for about 3-4 minutes until tender but crisp.
  4. In a mixing bowl, combine ketchup, cider vinegar, brown sugar, soy sauce, ginger, garlic, and reserved pineapple juice.
  5. Return chicken to the pan with vegetables; add the sauce and pineapple pieces. Stir until well-coated and heated through (additional 2-3 minutes).
  6. Serve immediately over rice or noodles.
