  • 2 tbsp vegetable oil
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce (low sodium preferred)
  • 1/3 cup sugar
  • 2 tbsp pineapple juice
  • 1 cup pineapple chunks
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1/2 medium onion (optional)

Instructions

  1. Coat chicken pieces in a mix of cornstarch, salt, and black pepper.
  2. Heat vegetable oil in a skillet over medium-high heat. Cook the chicken until golden brown (5-7 minutes). Remove and set aside.
  3. In the same skillet, combine ketchup, rice vinegar, soy sauce, sugar, pineapple juice, and cornstarch-water mixture. Stir until slightly thickened.
  4. Add diced bell peppers, onion (if using), and pineapple chunks to the sauce; cook for another 3-4 minutes.
  5. Return chicken to the skillet and toss until well coated in the sauce; heat through for another minute or two.
