  • 5 tablespoons unsalted butter (softened)
  • 1 cup dark brown sugar (packed)
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 tablespoon milk
  • whipped cream

Instructions

  1. Prepare the sweet potatoes by peeling and cutting them into chunks. Boil until tender, then mash until smooth.
  2. In a mixing bowl, combine flour, salt, and sugar for the pie crust. Cut in cold butter until crumbly. Gradually add ice water to form dough; chill for at least 30 minutes.
  3. Roll out the chilled dough to fit your pie dish.
  4. For the filling, mix mashed sweet potatoes with softened butter, brown sugar, eggs, spices, salt, evaporated milk, and vanilla until smooth.
  5. Pour the filling into the crust. Brush with an egg-milk mixture for a golden finish.
  6. Bake at 350°F (175°C) for about 90 minutes or until set.
