  • 325g granulated sugar (1 ½ cups)
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs, room temperature
  • 120g heavy cream (½ cup), room temperature
  • 240g sour cream (1 cup), room temperature
  • 1 tbsp cornstarch
  • 23 tablespoon lemon juice
  • 1 lb strawberries, roughly chopped in large chunks
  • 55g sugar (1/4 cup)
  • 1 tsp cornstarch
  • Juice of 1/2 a lemon
  • Fresh strawberries for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a springform pan by pressing the graham cracker mixture into the bottom.
  2. In a mixing bowl, beat together cream cheese and granulated sugar until smooth. Add salt, vanilla essence, then mix in eggs one at a time.
  3. Blend in heavy cream, sour cream, cornstarch, and lemon juice until fully combined before pouring into the crust.
  4. Bake for 60-75 minutes until slightly jiggly in the center; cool in the oven for an hour before refrigerating.
  5. For the strawberry compote, cook strawberries with sugar, cornstarch, and lemon juice on medium heat until thickened.
  6. Chill the cheesecake completely before topping with compote and serving.
