  • 1 clove garlic (grated fine)
  • 1/3 c bread crumbs
  • 1/4 c grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tbsp. fresh chives (chopped or 1 tbsp. dried chives)
  • 1 tbsp fresh parsley (chopped or 1/2 tsp dried parsley)
  • 1 tsp fresh basil (chopped or 1/2 tsp dried basil)
  • 1 tsp fresh oregano (chopped or 1/2 tsp dried oregano)
  • A pinch of salt and pepper
  • Tomato sauce (for dipping)

Instructions

  1. Preheat oven to 400°F and grease a baking sheet.
  2. Shred zucchini and squeeze out moisture.
  3. Grate garlic and mix it with zucchini in a bowl along with bread crumbs, cheese, egg, herbs, salt, and pepper.
  4. Shape mixture into small balls and place on the baking sheet.
  5. Bake for 15-18 minutes until golden brown.
  6. Serve hot with tomato sauce.
