  • 1 clove garlic (grated)
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg

  • Salt and pepper
  • Marinara sauce (for dipping)

Instructions

  1. Preheat the oven to 400°F and lightly coat a baking sheet with olive oil or non-stick spray.
  2. Grate the zucchini and wring out excess moisture using a clean towel.
  3. Grate the garlic.
  4. In a medium bowl, combine shredded zucchini, grated garlic, egg, breadcrumbs, Parmesan cheese, herbs, salt, and pepper. Mix until well combined.
