  • 6 day-old croissants
  • 9 ounces dark chocolate (chopped)
  • 1/4 cup sugar
  • 1/4 cup water
  • 1/4 cup sliced almonds
  • 1/2 cup softened butter
  • 1/2 cup granulated sugar
  • 1 1/2 cups almond flour
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 2 tablespoons whole milk
  • powdered sugar (for dusting)

Instructions

  1. Prepare the filling by heating sugar and water in a saucepan until dissolved. Remove from heat and stir in almond extract; let cool.
  2. In a mixing bowl, cream together softened butter and granulated sugar. Add almond flour, egg, egg yolk, vanilla extract, and remaining almond extract; mix until combined.
  3. Cut each croissant in half lengthwise and brush the insides with the cooled filling mixture. Place chopped chocolate and sliced almonds inside before closing.
  4. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper, place filled croissants on the sheet, and bake for about 15 minutes or until golden brown.
  5. Let cool slightly before dusting with powdered sugar and serving.
