  • 312.5 ml warm milk
  • 37.5 g granulated sugar
  • 12.5 g salt
  • 312.5 g unsalted butter (cold)
  • 5 eggs (beaten)

Instructions

  1. Activate the yeast by mixing warm milk with active dry yeast; let it sit until frothy (about 5–10 minutes).
  2. In a mixing bowl or stand mixer, combine flour, sugar, salt, and the frothy yeast mixture to form a dough.
  3. Knead the dough until smooth and elastic (8–10 minutes).
  4. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  5. Pound cold butter into a flat rectangle and chill again.
  6. Roll out chilled dough into a rectangle, place butter in the center, fold edges over, and roll out again; repeat two more times.
  7. Shape croissants from cut triangles of dough rolled tightly from base to tip.
  8. Proof shaped croissants on parchment-lined baking sheets until doubled in size (1–2 hours).
  9. Preheat oven to 200°C (392°F), brush croissants with egg wash, and bake until golden brown (15–20 minutes).
