  • 1/4 cup low-sodium soy sauce
  • 1/4 cup pineapple juice
  • 1 tablespoon honey or brown sugar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup pineapple chunks
  • 1 medium red bell pepper, diced
  • 2 cups cooked rice (white, brown, or jasmine)
  • Sliced green onions for garnish

Instructions

  1. Prepare the ingredients by dicing the red bell pepper, slicing the green onions, and mincing the garlic.
  2. In a skillet over medium heat, add olive oil and sauté the chicken until browned on all sides (5–7 minutes).
  3. Add minced garlic and red bell pepper to the skillet; cook for an additional 2–3 minutes until veggies soften.
  4. In a bowl, mix soy sauce, pineapple juice, honey or brown sugar, and cornstarch. Pour over chicken and veggies in the skillet.
  5. Stir in pineapple chunks and simmer for about 10 minutes until heated through and slightly thickened.
  6. Serve over cooked rice and garnish with sliced green onions.
