  • 3/4 tsp pure vanilla extract
  • 2 large eggs (room temperature)
  • 1/2 cup sour cream (room temperature)
  • 1 lb strawberries (rinsed, dried, and cut into small cubes)
  • 2 TBSP white granulated sugar
  • 4 oz cream cheese (room temperature)
  • 3/4 cup powdered sugar (sifted)
  • 1 cup heavy cream (cold)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, cornstarch, salt, baking soda, and baking powder.
  3. In another bowl, beat butter and sugar until fluffy; add lemon zest and vanilla.
  4. Mix in eggs one by one followed by sour cream until smooth.
  5. Pour batter into a greased dish and bake for about 15 minutes or until golden.
  6. Cool the cake before cutting it into cubes.
  7. Toss diced strawberries with sugar and let sit for about 10 minutes.
  8. Beat cream cheese until smooth; add powdered sugar and vanilla.
  9. Whip heavy cream separately until soft peaks form; fold into cream cheese mixture.
  10. Layer cake cubes, strawberries, and whipped cream mixture in a trifle dish or glasses.
  11. Chill for at least one hour before serving.
