  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce
  • 2 cups jasmine rice

  1. In a medium saucepan, combine jasmine rice and water; bring to a boil. Reduce heat and simmer for 15 minutes. Let sit covered for an additional 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper; cook for 6-8 minutes until browned and cooked through. Set aside.
  3. In the same skillet, sauté garlic and ginger until fragrant.
  4. Add onions and bell peppers; cook until tender but still crisp (about 4-5 minutes).
  5. Mix soy sauce, honey, and sriracha in a bowl; pour into skillet with vegetables.
  6. Return chicken and add pineapple; toss gently to coat and heat through (about 2-3 minutes).
  7. Serve over jasmine rice garnished with fresh cilantro.
