  • 1 tablespoon oil
  • 1 pound boneless, skinless chicken breast (diced into about 1-inch pieces)
  • Salt & pepper
  • 1 onion (cut into thin wedges)
  • 1 can (8oz) pineapple chunks or tidbits packed in juice, NOT drained
  • 1/2 cup BBQ sauce
  • 1 red pepper (diced)
  • 1 yellow pepper (diced)
  • 1 cup white rice
  • 1 cup water
  • 1 teaspoon oil
  • 1/4 teaspoon salt
  • 1/2 cup BBQ sauce
  • 2 teaspoons cornstarch
  • 2 tablespoons water

Instructions

  1. Set your Instant Pot to sauté mode. Heat oil and brown the diced chicken for about 5-7 minutes. Add onion and stir for another minute before turning off.
  2. Combine pineapple (with juice), BBQ sauce, and diced peppers with the chicken; mix well.
  3. Place a trivet over the mixture. In an oven-proof dish, combine rice, water, oil, and salt, then set on top of the trivet.
  4. Seal the lid and set to pressure cook on high for 2 minutes; allow natural pressure release for 10 minutes before manually releasing any remaining pressure.
  5. Fluff rice gently with a fork after removing it from the pot. Thicken the sauce by mixing additional BBQ sauce with cornstarch and water, then simmer in sauté mode until thickened.
