  • 2 tbsp olive or sesame oil
  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • ⅓ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • ¼ cup green onions, chopped
  • Optional: sesame seeds, chili flakes

Instructions

  1. In a skillet over medium heat, sauté cubed chicken in oil until browned and cooked through; remove from pan.
  2. In the same pan, sauté minced garlic until fragrant. Add soy sauce, pineapple juice, honey (or brown sugar), and vinegar; simmer for a few minutes.
  3. Mix cornstarch with water to create a slurry; stir into the sauce until it thickens.
  4. Return the chicken to the pan along with pineapple chunks and bell pepper; mix well to coat.
  5. Add cooked rice and stir until heated through.
  6. Garnish with chopped green onions and sesame seeds if desired before serving.
