  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup pineapple chunks
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon freshly grated ginger
  • Salt and black pepper, to taste
  • Green onions and sesame seeds, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken cubes, cooking until golden and cooked through. Remove chicken and set aside.
  2. In the same skillet, add onion, garlic, and red bell pepper; cook until fragrant and softened.
  3. Stir in pineapple chunks and cook for about 2 minutes until heated.
  4. Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Stir once to combine and bring to a gentle boil.
  5. Reduce heat to low, cover the skillet, and simmer for 18–20 minutes until rice is tender.
  6. Return the cooked chicken to the skillet; gently stir to combine and heat through.
  7. Garnish with sliced green onions and sesame seeds before serving.
